Easter Project Roundup

Everyone geared up for tomorrow?  We're expecting record high temps for today and tomorrow.  Mid 70's.  How exciting is that?!

I thought I'd pop in and share some of the things we've done for Easter in the past.  Including a table setting from when I hosted the dinner.  My sis is hosting this year and I'm in charge of appetizers.  I'm still debating on what to make.  Hmmm, I had better get on that.

So let's start with the table, shall we?  I made a runner out of Easter grass, then tucked in candles, plastic eggs, chocolate bunnies and lots of flowers.  There was a centerpiece and each place setting got a mini bouquet.

How's about desserts next?  I have yet to post the recipe for the most delicious carrot cake in the world, but here it is in all its glory.

This next sweet treat is one of my favorite desserts in the world.  I made it last year - my mom's bringin' it this year.  SO good.

And what would Easter be without decorated sugar cookies?
This is the only recipe I ever make and it's the best.
I've got the dough and frosting made, and we'll be baking and decorating with the kiddos sometime today.

I bought these egg-shaped marshmallows on a whim last year.
We smeared peanut butter on them, then dunked them in chocolate.
They didn't suck.

We still haven't boiled any eggs yet.
Bad mommy.
We'll see if we get to it before the day is over.

My aunt is bringin' 'em this year.

And if you're up for a fun Easter morning breakfast for the kids, these bunnies were super easy.
All ya need is a tube of cinnamon rolls.

Happy Easter: A Kid Lunch


This week's Fun Food Friday lunch definitely has an Easter theme.


The bunny is a peanut butter and honey sandwich and I used Nutella to stick the sprinkles on.  Lettuce grass, grape, pineapple, and celery flowers.  A jello Easter basket.  Carrots and grapes around the rim.

Cinnamon Roll Bunnies


The Girl was askin' for cinnamon rolls the other morning and I had just seen these "Cinnabunnies" on Pinterest, so I gave 'em a whirl.

I used a tube of eight cinnamon rolls and got five bunnies out of it.  Three of the rolls I cut up and used for the ears and noses.  The original used sliced almonds for teeth, but they were kinda creepin' me out, so I nixed the teeth.  I used slivered almonds and made whiskers instead.  Then I did raisin eyes.  We put the icing on the side for dunkin'.

Super easy and the kids thought they were great.
We even saved one for The Dad.
Yes, it's a miracle, I know.

Baked Ravioli In Pesto Cream Sauce


Remember that Pesto Ravioli With Alfredo Sauce I made last spring?  I couldn't stop thinking about it for over a week.  It was one of those cravings that wasn't goin' away.  So I put all the ingredients out on the counter on Wednesday and set to it.  If you remember that post, I had dolloped the pesto down over the noodles before pouring the cheese sauce over it.  It was delicious.  But I decided to change it up a bit.  I put the pesto IN the cream sauce.  Holy lord, people.  Why have I never done this before?!  Think of all the possibilities!  Pesto cream sauce?!  Yes, please.


I made the white sauce the exact same way as I had done in the other recipe, using the same measurements.  Butter, garlic, flour, milk, Parmesan cheese, salt, and pepper.  But before adding the milk and cheese, I whisked in two ice cube tray portions of pesto.


Once that was incorporated, I poured in the milk.


I let that come to a boil, whisking it the whole time, then simmered it until it thickened up.


Then the cheese went in.


Time for assembly.
Put a layer of frozen tortellini in the bottom of a baking dish.
I had some tomatoes, so I sliced those up and put them on top of the noodles.


Add another layer of ravioli, another layer of tomato, then finish with the last of the ravioli.



Now pour your sauce all over the top of everybody.



Put some more sliced tomato up on top and make it snow with some more cheese.




Cover and bake at 350 for 30 to 40 minutes.
Uncover and bake for another 10.
Let sit for about 10 minutes before serving.



Fresh basil on top would have been super, fantastic, but I didn't have any.
I did add a drizzle of balsamic.
We had our usual salad and bread to go with.
